
Pan-fried Sea Bass, Black Pudding Hash, Poached Egg

Ingredients • 2 sea bass filleted and cleaned • 450g cooked potatoes • 1 egg white • 110g Lancashire cheese, grated • 2 tbsp chopped chives • 3 tbsp chopped parsley • 4 slices black pudding • 4 poached eggs |

Method
Serves 2 Crush potatoes in a bowl with black pudding and egg white. Add cheese and herbs. Season with salt and pepper to taste. Mould into 4 using pastry cutter Bake in hot oven for 6–8 mins Pan–fry the fish, skin side down, in a hot oiled pan for 4–6 mins Place the fish on top of the black pudding hash. Top with a warm poached egg.
