
Radish, Goat's Cheese and Pea Salad

Ingredients • 2 tbsp clear honey • 2 tbsp lime juice • 1/4 cup extra virgin olive oil • 3 tbsp chopped fresh dill • 4 cups fresh peas • 1 bunch radishes, thinly sliced • 1 cup goat’s cheese, crumbled 3 cups pea shoots (optional) |

Method
Serves 4–6 Whisk lime juice, honey and oil in a small bowl. Blanch peas and shell, drain well and place in a separate bowl. Add radishes and goat’s cheese. Add dressing and toss. Divide between 4–6 bowls and serve.
