
Baked Pineapple and Mango with Ginger and Cointreau

Ingredients • 1/2 ounce grated ginger • 1/2 pint of orange juice • 2 shots of Cointreau • 2 oz runny honey • 1 small pineapple, peeled, cored and sliced to 1/2 inch thick • 2 mangoes (stones removed and sliced 1/2 inch thick) • 4 sheets of tin foil |

Method
Combine orange, ginger, Cointreau and honey in a bowl. Lay out double layer of foil. Lay out the pineapple slices on the foil. Pour over the Cointreau and honey mixture. Pour on the juice. Fold the foil over to form an envelope and seal edge. Place on a baking tray. Bake in the oven on gas mark 6 for 20 minutes. Dust with icing sugar and burst at the table.
