Summer Jelly Pudding

A fun family pudding

What do you need?



Ingredients

1 pack of blackcurrant jelly
1lb of soft fruits
3oz of icing sugar
White soft bread (crust removed)
1/2 pint of water

Method

Heat water to boiling.

Dissolve jelly in sugar.

Fold in soft fruit and remove from heat.

Line a 1lb pudding basin with cling film.

Line basin with slices of bread, and retain three for lid.

Gently fill basin with fruit mix.

Top with remaining bread for lid.

Weigh down top and refrigerate for six hours.
