Leek and Potato Soup

Ingredients • 3 large leeks, chopped into bite–sized pieces • 5 medium potatoes, chopped into bite–sized pieces • 1.2 litres (2 pints) low salt vegetable stock • Ground black pepper, to taste |

Method
Put all the vegetables into a large saucepan. Add the stock, cover and bring to the boil. Reduce the heat, season with pepper and simmer for 30 mins.
