Eton Mess

A very tasty dessert for the whole family

What do you need?



Ingredients

800g berries (strawberries or raspberries)
1 tbsp icing sugar 400g double cream
6 plain meringue nests

Method

Serves 4-6

Place berries in a bowl, cover with cling film, place in a bain–marie for 30 mins, then chill. Whip the cream with sugar to taste.

Crumble the meringue into a bowl (be careful not to crumble the pieces too small).

Add cream and berries and fold with a wooden spoon roughly.

Divide mix between 4–6 chilled Martini glasses or bowls and serve.
