Tuna Steaks with Pistachio and Wasabi Crust

Delicious tuna made in a matter of minutes

What do you need?



Ingredients

Tuna
150g shelled pistachio nuts
Zest of 1 lemon, 1/2 the juice
2 tbsp wasabi sauce
Parsley stalks and leaves
Coarse sea salt and pepper

Touch of honey
Garlic and chilli pak choi
1/2 red chilli
2 sliced garlic cloves
Flat leaf parsley
Coarse sea salt and pepper

Method

Vigorously mix all the ingredients for the tuna crust in a food processor.

Preheat oven to 250c, or gas mark 10. Place a heavy griddle pan on the stove and brush the tuna with olive oil.

Sear the tuna in the pan for 3 to 4 minutes. Leave to cool for 2 to 3 minutes then smear the mixture all over and place in the oven for 5 to 6 minutes.

A minute before the tuna is ready, place the chilli and garlic into the hot griddle pan that you seared the tuna in.

Cook for 45 seconds and then add the washed and dried pak choi.

Remove the tuna from the oven and plate. Serve with the pak choi and a wedge of lemon.
