
Mini white chocolate blueberry and raspberry tartlets

Ingredients • 40g unsalted melted butter • 100g icing sugar • 500g puff pastry • 230g raspberries • 30g blueberries • 20g unsalted butter • 90ml double cream • 3tsp raspberry jam • 3tsp blueberry jam • 6 prebaked tartlet cases |

Method
Crush the raspberries and blueberries through a sieve to collect the smooth coulis. Melt the hot chocolate and butter in a heatproof bowl while you heat the cream. Watch it constantly until it comes to the boil, then combine it with the chocolate mixture to make a ganache. Mix the jams together and place in the bottom of the tartlet cases. Spoon in the chocolate mixture. Garnish the tops with the coulis, and set aside in the fridge to cool.
